“A fast food diet is a diet that contains processed and ultra-processed ingredients, typically processed vegetable oils, added sodium, added sugar, and food coloring, coloring, fillers, and preservatives,” says Dr. Uma Naidu, Ph.D. medical sciences, psychiatrist nutritionist and author

“We know from research that our gut microbiome changes within 24 hours, so whatever you eat, healthy or unhealthy, has an effect,” says Dr. Naidoo. “If you choose fast food or fast food, it will have a negative effect on the microbiome. Bad food choices feed the bad bugs in our gut, helping them to thrive and overwhelm the good bugs (meant to help and protect us). Over time, the bad microbes cause inflammation, which can lead to leaky gut and neuroinflammation.”

“Often the salt and sugar in fast food is just as problematic,” says John Fox, certified nutrition counselor, NSCA CPT, and editor of science-based health resource The Unwinder. “Sugar is often artificial to keep prices low, and both are added to processed foods to preserve flavor. People who eat a lot of fast food like Taco Bell increase their chances of complications associated with diets that contain too much salt and sugar. “For example, just one extra order of Taco Bell Mexican Rice provides more than a third of the recommended daily amount of sodium, which experts advise keeping at around 2,000 to 2,300 milligrams a day,” says Fowkes. “That’s just a side piece too!”

“Then look at something like taco salad, which people think is healthier but also has 1,000 milligrams of sodium. Spoke with chefs to find out which common Mexican restaurant dishes are a must-try and which ones you can skip or make at home.

Chef Nick Bachal of Asadito in Chicago, Illinois, said he always orders chips and salsa when he visits a Mexican restaurant so he can gauge how much effort the kitchen is really putting into its menu offerings.

“Chips and salsa are sometimes seen as disposable. Some restaurants get lazy and serve stale chips and pre-purchased salsa. On the other hand, the great restaurant serves homemade red and green salsa and fresh chips,” said Bachal. 🇧🇷

“If a restaurant puts time and energy into the basics, it will put into everything else on the menu,” he explained.

Chiles rellenos is a dish made from stuffed poblano peppers fried in batter. Bell peppers are often stuffed with meat, raisins, nuts, spices, and cheese, like queso chihuahua or queso oaxaca.

It takes a lot of effort to prepare this dish, so ordering it from a restaurant is definitely easier than preparing it at home.

“Chiles rellenos require a lot of preparation, from charring, peeling, stuffing, breading and frying. If you see it on the menu, the chef must care enough to offer you an authentic experience. There are no shortcuts to this dish,” said Alex Martinez, executive chef at La Cerveceria de Barrio in Miami, Florida.

Homemade Mexican Churros

If you’re looking for a fun, affordable Mexican dish that’s easy to share (or enjoy alone), then Sopes is a great option.

Also known as picaditas, these are easy to customize and hard to get wrong as they consist of a thick taco shell dough, which is ground corn mixed with lime juice, stuffed with a variety of toppings.

“Sopes are really yummy. You can taste the taco batter and feel the texture of the fritter until it’s crispy. They’re usually topped with lots of chorizo, cheese, cream, refried beans, and lots of other delicious toppings,” said Martinez.

However, diners be warned: authentic Mexican hot sauces can make even the most ardent chili fan reach for water.

“If you are at an authentic Mexican (not Tex-Mex) restaurant, be careful what you order. True homemade hot sauces can be very hot. Check before you go all-in – you might regret it,” said Martinez.

If you’re looking for a sauce that’s not too hot, try pico de gallo or salsa verde for a flavorful but mild alternative.

Overwhelmed by menu options? You can ask the waiter about the house specialty, which often showcases the chef’s skills in a way other menu options cannot.

“If I don’t know a restaurant, I order the house specialty. If the house specialty is done well, I’ll come back and try the other dishes. If your specialties are not well prepared, I won’t be back,” said Bajal.

Bachal also recommended checking whether a restaurant serves food from a specific region of Mexico, like Veracruz or Oaxaca, or whether it offers certain types of tacos, like Al Pastor or Birria.

If the restaurant staff knows the origin of their dishes, the food is more likely to be carefully prepared and authentic.

Martinez said that if a restaurant offers hand-made tortillas in the kitchen, diners should always try them.

“I would order anything made with homemade tortillas. That way you know the ingredients and the difference in taste and texture is everything,” said Martinez.
